Every once in a while speech will just plain quit and I exit voiceover and relaunch voice over and get a message saying voiceover is configured to work with airplay. Then it asked me if I want to Revert to the default output device which I say yes to. I do have an Apple TV and the problem arose after trying to play a video from the computer through the Apple TV. My question is where will I find the setting to turn airplay off for VoiceOver?

You don't turn Airplay on or off. My advice is to set VoiceOver to use your built in output device rather than the system output device. To do this, open VoiceOver Utility, select sounds in the category table, choose a device in the next table and quit the utility.
