I recommend Pro because it does give you more control and more OS choices. There again, if all you want is to get a Windows VM up, it hardly matters which edition you choose. The completist in me is always happy for the extra flexibility though—things like whether the network adaptor can be promiscuous or not, or whether the virtualised CPU will have Intel VTX in the guest. It’s all good.
