I agree with the VMWare Fusion approach with the caveat it may be that
some hardware devices will not work under Fusion. My EyePal scanner for
example never worked under Fusion and needed a full operating system boot.
However I retain a Windows machine for this sort of thing and if I was
starting out with a Mac now I would not bother with a Boot Camp install
but go for the massively more convenient Fusion option.

The rest is up to the way you use your machine. If you’re just doing basic
browsing / mail etc an air will probably work well. If you need a more power
house machine for large spreadsheets or maybe you run a lot of virtual machines
or complex programs, music editing etc then go with as much machine as you can
buy. I have had no problems with any of the generations of Macbook pro
personally so can’t speak to that part of your question.
