So, if you was to enter the network recovery while an ethernet cable was connected, giving you hard-wired internet access, then am I correct in assuming that you’d not have to then worry about the screen asking for a wifi network, but instead, it would just go?

Then you’d be good to go. Of course, if you had no internet connection and/or no help available then yes, that would be a problem. Or as another poster pointed out you could potentially use trial and error to guess the order of Wi-Fi networks in the list.
