I suppose you could write your documents in Markdown, then use Pandoc to convert to Microsoft Word, PDF, HTML or whatever you want later on. In that case, you only need a text editor for each of the operating systems.
For the Mac, the best option seems to be Textmate. For Windows, I’m not sure what the most appropriate option would be, but Notepad++ worked well with both NVDA and JAWS when I last tested it. I do have it installed on my Windows system, but I tend to use Emacs with a braille display for editing text. For iPad, I don’t have an answer, as I haven’t looked. My iPad is rather old and lacks a physical keyboard, which rather limits the motivation to do any writing on it.
