According to the Mac World article, referenced in the link below, the recovery 
keyboard command, COMMAND + OPTION + R, allows for the installation of the 
latest version of macOS.  The Recovery keyboard command, COMMAND + OPTION + 
SHIFT +R, allows for the installation of the version of macOS that came 
installed on a Mac, if available.  If that version is not available, then the 
next oldest available version is installed.
Is this not correct??

came with your Mac.  It sounds like, in your case, this was 10.10 Yosemite.  If 
you've already used this process, and installed Yosemite onto your Mac, then 
you will not be able to use regular Recovery Mode (cmd-r) to get Catalina 
without some extra steps.  If this is the case, then go through the motions of 
creating a user and such for Yosemite, then go directly to the App Store and 
see if you can download and install Catalina.  I can't remember for sure if it 
will install over Yosemite, or if it requires Sierra.

By the way, APFS works on spinning drives now.
