I’ve never heard of EcoBee, so can’t give any recommendation about it one way or another.
I am using a Honeywell accessible thermostat. It was recommended by my HVAC service guy. It has both a web interface and an iOS app. Both are very VoiceOver accessible. I’ve had mine for about 5 years, and have found it works well. Current models also are accessible by Amazon Echo/Alexa devices. I don’t know it the Honeywell line works with Apple Home Kit. I highly recommend that anyone consider the Honeywell line of accessible thermostats.
