Hello Scott, Abbyy FineReader does a great job from TIFF files. I scan books a double page at a time, using VueScan, and it gets everything in the right order. It can also handle more than one language within the same document.
It occasionally has a fit and screws up a few words beyond all recognition, but this is rare. There are no preferences so you can't tweak it. ReadIris 12, on the other hand, is dreadful.
