Hi I don't believe that this is possible. You can only select text where it is editable. So for example if you wish to select some text that is in an email you've been sent, you would first have to setup a reply to the email. This makes the text editable and you then can go through and select some of it.
You can make a selection by doing a pinch out gesture. The text will be selected in increments of either character, word or line dependant upon your current rota setting. You can also do a select all by setting the rota to Edit and then flicking up. I don't know of anyway of selecting text on a web page directly. I guess you could email the page to yourself and then do the Reply trick as outlined above.
