Kevin Chao did a podcast some time ago on selecting text on the iPhone with 
VoiceOver.  You can find it at:
feed://kevinchao.podbean.com/feed/
Look for "Text selection. Copying and pasting."
Alternatively, you can listen to this on the podcast weblog page using the 
embedded player at:
http://kevinchao.podbean.com/
However, you'd have to use the link for older podcasts to navigate to the next 
page in order to access it  from the weblog page.
