My view is I am not having the problems you obviously are. So, not having used JAWS either, but having used WIndow-Eyes, I sure wouldn't switch back. Cutting and pasting text is quite simple. You would use shift-command or option-arrows to select individual words or entire lines respectively. Like anything new you need to learn how to use it. Of course your more comfortable with JAWS and windows because that is what you know best. Your question could easily be flipped around and restated to ask how anyone could use JAWS and WIndows if they were comfortable with the Mac and VO, and of course had not previously used windows or jaws. As far as typing on a website, I cannot comment since I have no idea what site you are accessing or any other facts about the situation. It could be an issue with the site, where you are trying to enter text, or truly an issue with how VO interacts with the site. It also seems to me that you need more overall Mac experience, which would probably help a great deal. Finally I don't know what you constitute as a satisfactory answer. Sometimes you need to seek answers from more than one source.
