It's something you opt into. Goto http://www.youtube.com/html5
and the 5th or 6th header will be a link saying to join the HTML5 trial. Action that link. From then on most youtube videos played from their site should use the html5 interface. Some older videos used Flash-specific codecs those will still use the Flash UI, but most today work just fine with the html5 player.
