Hello Allison,

To change the language in which your Mac runs, go to System Preferences and 
select the Language&Text pane. Choose the Language tab, and in the table of 
languages, use Option-Up Arrow to drag Spanish to the top. You'll then need to 
restart your machine for the change to take effect. You'll also need to 
download the Spanish voices you want.

You change the system voice in System Preferences, too. This time, you select 
the Speech pane and you'll find a popup button to choose your system voice.

You can also change the default voice at any time with VO-Cmd-Down arrow, as 
long as that was the last thing you did in the Speech Attribute rotor.
