Allison, Changing the default language on the mac to another language, involves 2 parts, just like it is on the iphone. The interface for all the items displayed by the operating system, and then your speech voice.
To change the language of the interface, for menus etc, go into system preferences, interact with the scroll area, choose language and text. In this dialog is a list of languages, of which the top one is the language that the mac interface will use. In the old days, we had to do some tricky things with dragging and dropping these languages into the right order, so that the language you want is at the top of the list. However, in Lion, it has become very easy. From the first tab inside language and text: 1. Move to the language you want to be at the top and hit vo comma. 2. Go to the top of the list and hit vo space there, so that your language is first in the list. 3. Hit command w and you should see the change immediately. To change the voice after you did the interface, you can download and install the Spanish voice from within the voice over utility, under speech, and if all is well, that should stay at how you set it, even after a reboot.
