Hello Chris, The best OCR app for Mac is ABBYY FineReader Express but I've never managed to get it to scan more than one page at a time. For this reason, I use VueScan to do the scanning part. It will scan multiple pages into one file that FineReader can then process all at once.
If you go down this route, I can send you my setup guide to make these two apps work together. FineReader can handle up to three languages in one document.
