I must say I have never had any of the iTunes problems you described, but I have found (and reported) the problem of a reset wiping out some settings. When I was using my iPod, the App Store became unuseable - nothing would show up when I opened it, and some apps that had been updating were stuck for days. I eventually re-installed iOS and that seemed to fix things. I hate to say it, but you may well have to do a complete re-install. Sorry about that.
