Maybe it's something printer-specific. On my machine (OSX 10.8) there is a "Two-Sided" checkbox just after the Copies number input.

This is a general Mac convention that until you make selections that indicate

The print dialog window is often used to save information to a PDF file without sending the output 
to a printer.  You can print information from most applications this way. For example, one 
frequently used option is printing a copy of a web transaction to save as a receipt or record of 
actions.  If you use Command+P, then navigate to the "PDF menu button" in the printer 
dialog window, you'll find an option for "Save PDF to Web Receipts folder", as well as 
other options that don't explicitly require printing -- such as sending the document as a FAX.

If you don't find the options for controlling page output when you use Command+P, navigate to the "Expanding Print Dialog" check 
box and VO-Space.  From Preview, as I described in an earlier post, you can set additional options in the print dialog window if you 
navigate past the areas for setting number of copies, page numbers, paper size, and orientation, to the "Preview" pop up menu 
button, then VO-Space and set this to your selection (e.g., "Layout", "Paper Handling", "Paper Feed", 
"Cover Page", etc.)  Then view the options for your selected category.
