 You have the combobox to the left of the address entry zone in which you
can choose another recepient type. Do this, enter the recipient and press
"Enter" -- hopefully it will be clear how it works then.

 You can also write "cc:[EMAIL PROTECTED]" and press "Enter" -- this does the
same but without using the mouse.

 Try the latest binary snapshot, it should be much better in many aspects
(although this one didn't change).
