 I want to see all addresses separately because:

a) you can remove them easily (click "delete")
b) you can change the type of a recipient easily (sometimes I decide to
   bcc someone instead of cc'ing him or cc instead of to just before
   sending the message)

 I've never used Outlook but I don't think that I'd like having all address
in the same text control. Especially if/when you're replying to a message
and not writing a new one.
