The IP is only used to send invoice emails to customers. Basically 3 lines of text + attached pdf. Very low volume ( less than 1.000 invoices per month are sent to @outlook.com <http://outlook.com> ).

Very low volume senders can have problems  because they have limited data to build reputation statistics on.

Emails consisting of almost no text with an attachment are also a bit suspicious so could be junked by the recipient, and, along with the very low volume, that could trigger blocking.

I don't know what the text is, but could you make it more personalised, so the recipient can be more certain it's not phishing?
