Several things can change this, depending on many factors.  For
example, if you are using Mail.app, the "cosmetic" email address you
see will be keyed to what is in the Mac OS X address book.  This has
gotten me in trouble many times.  I believe the "key" used is the
actual email address, but if you have the friends name set to "Jerk
Face" that is what will show up as the sender in Mail.app.

Please test thoroughly on your own system as so many variables can
affect the outcome.

In the past I have found if you have the sender in your Gmail Contacts
Database, (not the local Apple Address Book but Google's online
Contact Database) it will "key" to the email address, and then display
the name set For First and Last.  I have also seen it use the nickname
in some scenarios.

If there is no entry in your Google Contacts Database, it will fall
back on the cosmetic from: in the email headers.

If there is no cosmetic from: in the headers, which is rare, fallbacks
on Return-Path and Reply-To are probably used.

You could go into your Google Contact Database and make alterations to
clean this up.

Again, so many variables, it is best to test thoroughly or you will
reply to people in a way you don't necessarily mean to.

I am waiting on a reply from MailPlane support, but if MailPlane
supports Safari Extensions, there is a tremendous amount of
flexibility that can be achieved on the display side of MailPlane, and
often the functionality side as well.  Without Safari Extension
support, we are limited to cosmetic css changes.  For example, I have
been able to remove the fourth column in the three column email pane
view to give me more width to compose messages.

The Safari Extension 'NinjaKit' enables most 'UserScripts' aka:
GreaseMonkey Scripts.  It does so without the mess of SIMBL/GreaseKit
(Which does not work at all in Safari 5) or other system level
alterations. There already are several user scripts that will alter
the email address of the sender.

You currently can save the step of clicking on "more info" by hovering
over the email address for ~half a second; a pop over will show the
contact record and full email address.

Hope that helps. I will try to follow up on any info about Safari
Extensions.
