I'm seeing exactly the same symptom, but only in one of my two Gmail accounts. Typing a reply or forward is sluggish and takes a while to the text to catch up and display. Typing a new message is fine. I'm using the new GMail compose mode.
I'm on Mailplane 3 beta (587) and Mountain Lion 10.8.2. I do not see the same slowness if I try gmail in the Chrome. I've tried messing with the spelling/substitution settings and turning on/off chat and G+.
