Shrimp & Pasta in Green Peppers

1/2 Cup Uncooked Dried Rosamarina Pata (orzo)
6 Cups Water
1 Tablespoon Mixed Pickling Spice -- if desired
1 Pound Fresh or Frozen Raw Medium Shrimp -- shelled,
deveined, and rinsed
1 Stalk Celery -- sliced 1/2" thick
1/2 Cup Halved Red Seedless Grapes
1/4 Cup Sliced Green Onions
2 Large Red, Yellow, or Green Peppers -- cut in half
crosswise and seeded
Dressing:
1/2 Cup Plain Nonfat Yogurt
1/4 Cup Low Fat Mayonnaise
1 Teaspoon Chopped Fresh Marjoram Leaves (or 1/4 Tsp.
Dried)
1/4 Teaspoon Grated Lemon Peel
1/4 Teaspoon Salt
1/8 Teaspoon Pepper
Cook pasta according to package directions. Rinse with cold water; drain.
Set aside.
Meanwhile, in 3 quart saucepan bring water to a full boil; add pickling
spice. Add shrimp. Cook over high heat until shrimp just turn pink (3-4
minutes). Drain; rinse with cold water. Remove pickling spice.
In large bowl combine pasta, shrimp and all remaining salad ingredients
except halved green peppers.
In small bowl, with wire whisk, stir together all dressing ingredients.
Gently stir dressing into salad. Cover; refrigerate at least 2 hours. To
serve, spoon salad mixture into green pepper halves. 4 servings.
