I have a 400 MHz G3 upgrade card in my 9600. 10.1.x was too slow to
use, 10.2 is usable (but still not OS 9.x-like snappy-ness).

I had 10.1.x on my 600 MHz G3 iMac at home, I didn't use it much.
After I installed 10.2, I had been using it for a few minutes, then
stopped. It was the first time I hadn't made a note of how slow OS X
seemed.

Remember, the faster memory bus in the beige G3's (compared to my
9600) will help. Make sure you have a fast disk, that makes a
difference too, in my opinion (OS 9.x doesn't do as much logging,
etc).
