I have several SCSI cards 'cast off' from our video editing stations 
(all ATTO).
No disk attached to any of them will boot OS X, but disks attached to 
the later model cards will mount after booting. I know my card 
doesn't work if I get a blank screen, then it swings to OS 9 after 
the install.

I am due to replace some Adaptec cards soon, I'll see if they will 
allow booting.

OS X is similar to other UNIX systems in that it tends to start many 
small utilities.

For instance, if you print a web page, and choose Print Preview, it 
wil spawn 'Preview.app'. When you print, it will spawn 'Print 
Center.app'. Each time OS X starts up a program, the hard disk is 
accessed. If your disk is fast, the interactivity of starting these 
small pieces is better, and the overall feel of the OS seems snappier.

As for performance, I like my iMac G3 600 MHz running 10.2 better 
than the 300 MHz RM5200 SGI O2 running IRIX 6.5.12 at work ;) If I 
was running Maya, I might switch that around.
