I prefer to do Build and Capture's using an MDT TS that has a Pause step. During the Pause, we install all of the updates using Windows Update manually until we get the 'all updates installed screen'. At this point, I resume the TS to finish the Build.
I've actually got a dedicated VM that I use for this with a Snapshot right after the Pause step begins. Now when I want to capture updates, I restore to that point on the VM, run my updates, and then hit Resume Image Capture (via the MDT desktop shortcut). This cut my image build time drastically!
