This seems like a wacky thread :) UDI is part of MDT, so no, you really can't use it without MDT. And it works only in conjunction with ConfigMgr, so you need that too.
Lite Touch is also part of MDT, designed to be used without ConfigMgr. It provides its own wizard framework.
