I bet the problem is your voltage stabiliser for the dash instruments.

This happens in my 180b as well, but I think that the reason the fuel gauge

moves could be because the float level in the fuel tank changes when you go

around a corner? As for the shifting temp gauge, mine used to do that all 
the time, so I checked the thermostat an that seems to have fixed it, you 
may want to check the gauge itself, coolant/water levels, and your water 
pump...
