Zac,
The minimum disc thickness is usually determined by the amount of material
thickness the rotor has between the support struts.
If the rotor surface gets too thin, the surface between the struts cannot
take the clamping load applied by the pad and starts to flex, then crack!.
The piston travel in the caliper is not a problem in most applications.

Thanks for the info Errol, sure looks like a top brake conversion.
As for Craig's query, could you place a very thin piece of tin plate or
something on the back of the brake pad to make up the difference between
disc width? Although there is probably a good reason why you don't do
this... :)
