so using a kit such as a datsport one which takes care of the suspension and steering geometry thus getting rid of bump steer probs.
using r31 struts which have a better scrub radius than the stock 1600 struts on stock suspension and steering and using a steering box brace along with say 6.5" or even 7" tyres with a suitable offset would be the best option for good steering response, handling and braking etc?
assuming a good wheel alignment?

Yes the bigger contact patch is desirable for better steering and braking,
as long as your rubber is pointing in the right direction all the time.
Excessive lowering and steering box flex both work against good steering
geometery and amplify any of their faults through the better gripping
rubber.
