They called it usury back then and it was considered a sin...unless on a "productive" loan...getting way OT. No, they simnply controlled the purity of thier gold Bezants very strictly. THey never "inflated" by decreasing the gold content but forcing people to accept them at the same face value (like the Fed does when it "creates" more money that there are goods and services in the economy).
