Turbo Chevy LUV and Isuzu P'UP had good off road capability and excellent fuel economy, but try finding one that hasn't dissolved into a pile of rust flakes...
My brother had a gasser '78 2wd LUV. Nice little rig, got 30mpg IIRC, but not much room in the cab.
