Thats how I was taught too, I usually use 1/2 turn in, 1 turn back.
You see a lot of guys on YouTube just cranking them down. I wonder how fast 
they ruin taps and how often the break them.

Isn't that how you're supposed to do it? That's how I was taught - one forward, 
two back. Oil up or clear it out if full of chips.
