Just to followup, we ended up going with rsync. Being that we were switching from a windows server to a linux server, we already had to run all over the place and remap all the shared drives and network printers on all the client systems (unless there was an easier way), and deal with all the expected unexpected problems that went with that, so the data was one thing we didn't want to have to fret over. The initial rsync took over 24 hours to complete, the following rsync took less than 5 minutes, and subsequent ones before the switchover all took less than a minute.
