I'm new to Linux and I've never done it using Ubuntu.

Would building from source code be worth having as a meeting presentation topic?

Linux from scratch is a tutorial which shows how to build your own custom distribution from source.
Its a great way to learn the internals of linux.

I did this back in 2000 so I think the tutorial must have improved dramatically. Back then I had some problems finding source for some important packages and had problems compiling some stuff like Sane (scanner software). Based on this experience, I don't really recommend doing this to use as your every day linux desktop because software might brake.
I had a lots of fun doing it though :o)
