Easy enough to remove. Assuming you're starting with a complete car,
pull the cat-back exhaust, the driveshaft and disconnect the PPF from
the diff. In the case of a 1.6 car, you have two-piece axles so you can
break them apart at the flange. Undo the four small nuts and two big
nuts holding the differential assembly in place and it will land on your
head. Probably a good idea to have a jack under it before you do that
then.

        How hard is the differential to remove? What is the "right"
process? 

        I assume the axles come off, but I hear this is not a simple
task.

for around 80k on his 1990 and was still working when it was pulled.
Some people stick with it due to cost (replacing a damaged VLSD is about
15% the price of a Torsen swap) or class regulations. STS autocrossers,
for example.
                 
                Anyhow, I wouldn't throw one away. There are definitely
people looking for them.

                                Is there any value in the interior
plastic panels behind seats?  Anyone need them after removing a rollbar?
What about the carpet. Its in fairly good shape (loop carpet in black).
Still have top frame, used seats, wiring harnesses and a few other
miscellaneous pieces I am leaving in unless someone has interest in
them. The suspension arms are rather rusty, so I am going to skip
pulling them.  
                                 
                                All other items available cheap. 
                                 
                                Any suggestions on best way to get rid
of a stripped Miata carcass?
