Undocumented magic is a great way of putting it. Best I've found is Maximum RPM (Postscript version here: http://www.rpm.org/local/maximum-rpm.ps.gz). Also, here is the v4.1 API docs for RPM: http://www.rpm.org/rpmapi-4.1/. I've continually learned more by studying RH's spec files though.
