XMPP with OMEMO is probably the best you can do if you want privacy, 
modern features, and self hosting.

If you're doing a group chat E2EE is probably overkill unless you're in
the military. IRC with IRCv3 features like persistent history will
probably be easier to set up.

If you don't really care about self hosting Matrix seems pretty popular.
I would avoid it if that's important to you though.
