Depends on the tire; I know one person who is happy with that size on a GLI. The speedo error is only +2.1%, the difference in overall diameter.

195 55 14 is a much better choice.

I agree that it's the best choice for handling, but there are far fewer tire models made in that size. Also, it has a considerably smaller overall diameter, so the engine will spin faster at highway speed, lowering fuel economy a bit, and it'll affect the speedo reading even more than a 195/60: -3.3%.

185 60 14 is the other stock 14" tire size, and they handle much better
than 195 60 14's.

For a lighter weight chassis, like all your cars, 185's are OK. But, IMHO, a heavier A2 really needs a wider tire.

205 60 14 is way too tall.
