Go with Koni's.  They are rebound adjustable, which will allow you to tune
in more front rebound.  This will help keep the front tires loaded during
hard launches.  Koni's are a little more expensive, but well worth it.  I've
run Koni's on all my VW's, and love 'em.

No, you just trim 1.5" off the existing ones.

Nope.  Again, use the stock bumps, and trim 1.5" off their total height.

Unless your car has very high mileage (>100K), the rear bushings should be
fine.  They aren't all that easy to replace, anyway.
