Your best bet would be to use some spacers in the rear for clearance.
However it should not be rubbing... something is probably not aligned
correctly back there.  I would make sure that the brake lines and e-brake
cables are routed correctly.

I have run the following tire sizes on my GTI without any rubbing problems
(at least on the brakes)

185/60-14
195/55-14
195/60-14
205/45-16

What do the shocks/springs look like?  Eibach springs are either a dull
red (sportline) or black (pro kit).  H&R's are usually red.  I'm not sure
about neuspeed.  Bilstein shocks and struts are yellow, KYB's are white or
silver, koni's are yellow or red... whew! there's more, but that covers
some of the major ones...
