My temps were up to 280 as well at Sebring, FL this past weekend. I also found power steering fluid had misted the battery and some other nearby hoses and wires. I have a new tank to put in yet as I've always suspected it had a leak. There has to be a lot of fluid flowing through the tank at high rpms especially.
I'll probably install an oil cooler before I go to the track again, but I don't think those temps are really harmful. My Corrado used to get that hot with only a little hard driving. What is considered too high an oil temp? I am running standard 20w50 valvoline (not their racing type oil).
