If memory serves me correctly the oil temp sender is located on the
back of the cylinder head, almost directly behind the distributor. 

Once upon a time I accidentally knocked the wire loose from that
sender.  During my race that immediately followed, I was momentarilly
befuddled by the fact that the water temps were high but that my oil
temps were non-existent - doh!!
