The pressure plate was hard to get out because the engine would turn every
time I would yank on my ratchet.

There's a special VW tool that can be used to secure the PP in place. Pretty easy to improvise actually: just a strip of metal with two holes spaced roughly 2" apart, plus a couple of bolts. Attach one end to the PP with a bolt through a flywheel mounting bolthole, and secure the other end with a long bolt thorough a conveniently located eyelet on the engine block. PP won't turn anymore.
