I'd leave the stock thermostat in place really.  You guys using
synthetic oil?  I'm going to start using synthetic once i get 1000
miles on the new engine.  Also, wonder if the temp sender is more
affected by a difference in grounding than anything else.  Is this the
sender on the back of the head?
