Mario,
I'm an idiot when it comes to anything technical, but:
Check your samba configuration file and check 'valid users' for the
defined share.. your username should be in that list. Also, have you
added the user using smbpasswd?
I have partitions on an XP machine which I can write to using a root
account and not using a normal account. Andrew once replied saying this
could be a problem with [some program begenning with A, AIX???]
resetting my permissions on the mount to be owned by root.
The info above is probably irrelevant, incorrect or bloody obvious...
but at least I tried :)

nope
you are accessing the Win2k directory structure via SMB over the
network. you would only need native NTFS support inside linux if you
trying to mount a drive locally with NTFS - i.e. attaching a Win2K
formatted drive to a linux machine with an IDE / SCSI / SATA cable.
your problem must be elsewhere.

Could it be that I cannot write to the Windows 2000 server because I'm
using the NTFS file system on it?

I had something similar here and instead of using smbfs, I got around
it by deploying cifs. I can now mount any share that I like just as
long as I provide the appropriate domain password.

I've finally got round to this again! What I find curious
is that if I log on to the Mandrake Machine using root I
can access the folders I want and save to them on the
Windows 2000 Server, however when I log on as a normal
user on the Mandrake machine I can view, open read and
access all folders I need but I cannot save to the folder.
Do you still think it's a Winbind issue? Also I do not
have Samba Server running on the network as this desktop
would be the only Linux machine on the network.
What do you think?

It's almost certainly the file-sharing permissions on the
server. If you
are using a Win2K machine as an authentication server
(ie, "Login to
Windows NT Domain" on Windows), you will need to setup
Samba's winbind
service to retrieve user names and group names from the
2000 server.
Once you have logged in via WinBind, the 2000 server will
recognise your
user as a valid username.
Try to check how the 2000 server is reporting your
username when you
connect from Linux.

Here is my problem and probably one of two last
remaining issues before
I migrate to Linux at the office. I can manage to access
the Windows 2K
server and open my documents etc but I cannot save to
the server. I get
access denied. Probably it is an issue related to
rights.
Any ideas?
