I agree that it would be counter-productive if a user could freely change the grade on any card in the database.
However, it could be very helpful if the user could UNDO a grade immediately after assigning it, for example if they hit the wrong grade by mistake and want to backtrack. Enabling Ctrl-Z would be the most natural way to do this.
