Separate databases have separate media directories, sorry... As mentioned explicitly in the program and the documentation, it's really recommended to have a single database.

If you want to study just one language, you can do so via 'Activate cards' and create a saved set 'French'.

If you want to share only your French cards with your friends, make sure that only your French saved set is active, then choose "Export" "Mnemosyne 2.x cards format". That will also automatically bundle all the French media files in the *.cards file, without you having to do anything special.

(BTW, sending french.db to your friend was not a good idea in the first place, as then your friend would start from your learning history...)

I guess what I'm really asking for is the ability to subfolder media
files, so that I can, say, have one folder with all images, one folder
with all French sounds, one folder with all German sounds, Spanish,
Irish, etc, instead of having the same set of pictures copied to each
folder.

You can certainly create subfolders in the media directory of each database as I explained in my previous mail, but one database cannot 'see' the media files in the media folder of another database.
