I have even tried that. The following is what is happening.
I can either leave default which is
From: monit@$HOST

or manually set
From: monit@$HOST

and...

set alert [email protected]


The email is sent to monit@$HOST
ex.
to=<[email protected]>

I can see the same effect if I change...
From: [email protected]

or set...
set mail-format { from: [email protected] }
The email is then sent to [email protected]; again using the From: as the
to: as well...
