I'm gathering no one else is experiencing this problem, but in the interest of helping those who might come after me, some more information:
The problem does not appear to reside in the csproj or sln files; I am able to add a new view controller to the project whose previous view controllers won't edit in xcode, and the new one works correctly. I've been looking at the contents of the xib file, to see if that might contain some hint or other to MT to generate the necessary *.h and *.m files. There were a couple of tags at the top that contained versioning information I thought MT might use, and that were different in the new controller I added. The first: <archive type="com.apple.InterfaceBuilder3.CocoaTouch.iPad.XIB" version="8.00"> (I changed the version from "7.10" to "8.00" -- no difference in behavior); and the second: <int key="IBDocument.SystemTarget">1280</int> (changed from 768 to 1280, again no difference in behavior). It appears naming conventions have changed at some point; my old controllers have three files associated with them: MyController.xib, MyController.xib.cs, and MyController.xib.designer.cs. The new controllers do not include the xib in the cs names, i.e. the files are MyController.xib, MyController.cs, and MyController.designer.cs. I may be looking in all the wrong places, but I think I've exhausted the obvious places where the pre xcode 4 files are different and might be confusing MT. Any help is appreciated.
